What kinds of monsters appear in Chinese literature / stories? In Europe you can find vampires, werewolves and probably lots more I can't think of . . .

I will briefly explain the mythical hierarchy.

Above all: 天 (don't ask me who or what 天 is)

The good and powerful guys: 神、仙、佛
玉皇大帝 and 皇母娘娘 are the rulers of the heavens, and all other heavenly subjects are 神, 仙, or 佛。Many legendary hereos had been said to be reincarnations of different gods and goddesses.
Famous gods and goddesses:
月老 who governs love and marriages,太上老君,太白金星,二郎神 and his 哮天犬,八仙(collectively called the Eight Gods),嫦娥 (the moon goddess) and her 玉兔,风雷雨电,托塔李天王 and his son 哪吒, 土地公公etc.
观音菩萨and如来佛祖 came from 天竺(India).

The helpless: 人. However, the emperor was 天子。He was directly under 天。

The bad guys: 妖、魔、鬼、怪、精、灵、魂、僵尸
They are evil or lost spirits and monsters wandering in 人间.
魔, the devil, very powerful evil spirit.
怪 any monster that knows magic but does not look like a human.
妖 stronger than 精。妖精s train for hundreds or thousands of years to take the human shape/form. They know all sorts of evil magics. 琵琶精、狐狸精、白骨精、蛇精, etc. Usually they are bad, but they can sometimes be good. Like 白娘子 was a 白蛇精, and she was good. The monkey king 孙悟空 was 猴精, and he was good.
鬼魂,灵魂 are ghosts and spirits.
僵尸s are zombies.

In the seas and oceans: 四海龙王 and their 虾兵蟹将。东海龙王is the leader of the four Dragon Rulers.

In Hell: Ruler of Hell--阎罗王。黑、白无偿 and 牛头马脸 are the famous guards and subjects of 阎罗王. 阎罗王 controls life and death of people. However, he himself is a subject of 玉皇大帝.

《封神榜》and《西游记》are the best novels to read about these mythical beings.

Wow avatars in Chinese myth.

Liao Zhai is the best place to keep up with spookies. Not only that you have a lot of sordid sex stories interspersed. Enjoy.
