In simplified Chinese characters system, he stroke orders are strictly based on 《 现代汉语通用字笔顺规范》 (Modern Chinese Commonly Used Character Stroke Order Standard) published by 国家语委和中华人民共和国新闻出版署(China National Language And Character Working Committee and General Administration of Press and Publication of the Peoples' Republic of China) in 1997. [Edit by Hofmann: answer deleted.]
The stroke order of 必 is on page 20 of 《 现代汉语通用字笔顺规范》.

Thank you for writing this series. It's enlightening for me.

 

I'm having a difficult time understanding question #7, the stroke order for 必. The answer key says that the answer is (a). Am I reading the answer correctly? Is it 丿 乚 middle 丶left丶right丶 ? And, if that is the correct stroke order, I am having a difficult time seeing that. Could you help explain it please?

必 has several correct stroke orders.

The stroke order promoted in #7 is practiced by calligraphers.  It is based on analysis of calligraphy works done by famous calligraphers.  It has its merit, but is not absolute.  Because stroke orders can vary depending on the script. Compare the two 必 written by the same calligrapher 王獻之:
