For 湯, Chinese strictly means soup while Japanese means bath water. So Chinese drinks 湯 while Japanese bathe in 湯. (I guess some Chinese guys don't mind drinking a cup of water that Rena Tanaka just bathed in.) For 汁, Chinese means juice/sauce while Japanese means soup.
