I'm working on a composition for school and I'm not sure if this should be translated like this:

我是孩子的时候，我想当一位老师。

We learned this sentence structure for when one action disrupts another, but I'm not entirely sure how to phrase this...

一位 is not wrong, but can be omitted.

the meaning you talk about is clearly shown in the meaning or characters 孩（baby) 提（carry （a basket））. But a lot of us use it in articles like that. Of course, seriously it's mistake. But normally 非老学究会忽略这个问题吧。
