Usually, an existing Chinese characters that sound phonetically similar to Stephanie will be used to translate your name, probably three characters. The thing many different 3 set of characters that can sound same to your name. You need to make sure the Chinese meaning of these 3 characters would be suitable for you as each of these 3 characters will have their own meaning. And some could be less flattering than others.  斯蒂芬妮 seems to be a generally accepted transliteration for Stephanie. 

Like 斯蒂芬妮公主 (Princess Stephanie of Monaco)

It doesn't sound like a Chinese name at all, but obviously it's not a Chinese name so I guess that's fine.
