There is fairly large english speaking contingent, and if they dont speak english then they speak cantonese. Also, there is way too much to do in HK (I would be so distracted from learning chinese, and would spend the whole day in cwb) Dont get me wrong, im sure the teaching is really good but for language learning im not convinced its the best. Right across the border on the mainland I know of two good options for study. with definetly fewer English speakers. One is GLV in Zhu Hai (www.totalimmersion.com) and one in Shenzhen is EMW Cultural Immersions (www.emeetw.com. Most people here understand Mandarin but communicating is a completely different kettle of fish, so outside of school the chance of immersing into the language will be less than even in Guangzhou. I'm not sure about which of the universities offer mandarin courses, but those that do may not be directed towards foreigners, but rather Hong Kongers and therefore instruction is likely to be in Cantonese.
