Shanghai niangao is my favorite. Stir-firred with Chinese cabbage, shiitake (Chinese mushroom), bamboo shoots and salty pork, Shanghai niangao is as yummy as anything you can find on the earth! But there are some tricks about Shanghai niangao: (1) The starch (niangao) must be in relatively minor proportion to other ingredients; (2) The salty pork must be really salty; (3) The bamboo shoots must be fresh and not the canned kind. Instead of going to the southern merchandise grocery store (the store that specializes in Shanghaiese foodstuff in HK) to buy those stick kind of niangao which afterwards you have a hard time to slice it, you can go to the Korean grocery store to buy the frozen pack of sliced niangao.
