Translation of sentence using the VERB+得了 and VERB+不了 structure?

The exercise gave us this example to change into the "verb + 得/不 了" structure:

1. 这么多菜,我吃不完。

2. 我的汉语水平不高,不能学 C 班的课本。

I put:

1. 这么多菜,我吃得了。

2. 我的汉语水平不高,能得了学 C 班的课本。

Just for clarification, "这么多菜,我吃不完" and ""这么多菜,我吃得了" both mean: "When there is so much food, I'm unable to finish eating it all", right?

And, "我的汉语水平不高,不能学 C 班的课本" / "我的汉语水平不高,能得了学 C 班的课本" both mean: "My Chinese level is not very high, so I am unable to study the grade C textbook"?

Just for clarification, "这么多菜,我吃不完" and ""这么多菜,我吃得了" both mean: "When there is so much food, I'm unable to finish eating it all", right?

No, 我吃得了 means I CAN eat it all.

If it were 我怎么吃得了 then it would mean: how can I eat it all? (It's just too much, I can't eat it all!)

Your second sentence is wrong. It should be: 我的汉语水平不高,学不了C班的课本.
The 1st should be corrected too: 这么多菜,我吃不了 (or as Leeyah suggested: 这么多菜,我怎么吃得了? if this isn't too advanced at this level.)
