Initially, I had a great deal of difficulty in figuring out how to turn on the pinyin ime. After scouring chinese webboards, you need to hit apple+space. The ipad should use the same key combination as well. It's embarrassing since I should've figured it out from the OsX combinations, but I thought I'd post this anyway in case somebody else is having the same problem.
