Hi, also ui in 对不起 is pronounced as "uei" or "wei". Maybe you heard someone speaking fast and it wasn't clear or it's a non standard pronunciation. You can get used to recognize both but just use "uei" when you speak. Maybe try to find a video on youtube, use a dictionary with tts or ask a Chinese person to pronounce it for you and you'll see that it's usually pronounced "uei". You can also hear it on Forvo: https://forvo.com/word/对不起/#zh On Forvo for example only 1 person out of 16 pronounced "ui" as "ui" (all native speakers).
