When starting a letter, how do you write 'Dear X Family' in Mandarin Chinese?

Joldo，while i am a chinese, but to be frank, i am not so sure what kind of letter u are trying to write. so i cannot give you a exact translation to that.

while it seems to me that you are trying to write to several persons. my suggestion is that u give all the names one by one in a reasonable order with proper titles.

examples:

亲爱的爸爸、妈妈： （we are not saying 'dear parents'）

尊敬的X教授，X 教授 （suppose they are a couple）

if u are close to the family, u can just directly write to the host, its not the tradition to mention the hostess and the children right at the beginning, but u can greet them in the letter.

and at the end of letter , you may address : 干儿子，XXX。

yeah, maybe there's a possibility to say" 代父母", but "教父母" is common used, haha
